DEVELOPMENT OF HIGH-QUALITY FOOD PROTEINS THROUGH THE SUSTAINABLE PRODUCTION AND PROCESSING OF LEGUME CULTIVATION

On the occasion of the recent approval of the PROTEINLEG Operational Group, the national press has echoed the innovation project. Marta Santalla, researcher of the Devoleg group of the Biological Mission of Galicia (an organization dependent on the Higher Council for Scientific Research, MBG-CSIC) has exposed, in statements to La Voz de Galicia, what are the objectives of PROTEINLEG and what activities will be developed to achieve them. PROTEINLEG wants to value traditional legume crops as a source of quality vegetable proteins. From these traditional varieties, on which innovative cultivation techniques will be applied, new products for human food and livestock feed will be developed. In this way, the researcher points out, alternatives to animal proteins and soy, respectively, will be provided.
